You will select the portion sizes of your meat, and we will cut your meat the way we would want it done for ourselves after we have evaluated your carcass.
WE WILL STRIVE TO MAXIMIZE THE VALUE OF YOUR CARCASS.
This is the ideal selection for those who are not well educated on the various cuts of beef, and are unsure of exactly how they want their beef fabricated.
BY SELECTING BUTCHERS CHOICE you are giving us the authority to use our judgement on each cut of meat. If a carcass is in good condition and would grade from select to prime you will receive: Chuck, Arm, Sirloin tip, Shank and Ribs as braising roasts. You would also get Ribeye, T-bone, Top Sirloin, Flank, Skirt and Tenderized Top round steaks.
WE STRIVE FOR 85% lean burger, but this is not always possible due to each carcass composition.
If we feel the maximum value of your beef is burger we will burger it. If you do not trust our judgement, or are particular in anyway, please select "Custom Cut" to fill out a customized order.
